Dinner in 10!

Last night was super busy, but that didn’t mean we couldn’t have a nutritious dinner!  I am not a huge advocate of convenience foods, but these items made my life a lot easier last night: Whole Foods 265 Organic canned black beans, Trader Joe’s frozen roasted corn, pre-washed organic spinach, Whole Food’s guacamole, and Trader Joe’s frozen pre-cooked brown rice.  The only thing I had to do was cook my Whole Foods 365 Organic boneless, skinless chicken breasts with a little salt, pepper, and ground cumin – dice it up and add to the rest!  Easy peasy, nutritious meal in 10!

Chicken, Corn and Black Bean Brown Rice Salad

Serves 4

Ingredients:

8 ounces cooked (grilled or roasted) boneless skinless chicken breast, diced

1 package frozen pre-cooked brown rice (microwave for 3 minutes)

1/2 bag frozen roasted corn kernels, defrosted

1 can (14.5 oz) organic black beans, rinsed thoroughly and drained

1 handful cherry or grape tomatoes, quartered or halved (depending on their size)

1 handful fresh cilantro, chopped

salt and pepper to taste

Homemade or store-bought guacamole

Homemade or store-bought fresh salsa

2 oz shredded cheddar cheese, optional

Organic pre-washed spinach

Preparation:

1.  In a large bowl, mix together chicken through cilantro.  Season with salt, pepper and even some ground cumin if you desire.

2.  Place a large handful of fresh spinach on the bottom of four large bowls.  Spoon 1/4 of the rice salad over each bowl and top with 2 Tbsp shredded cheddar.  If you choose to heat the salad first do so in the microwave or serve cold.  I like mine warm with melted cheese and wilted spinach.

3.  Top each serving with a dollop of guacamole and salsa and enjoy!
