Eggplant Parmesan Goat Cheese Stacks

This dish may not be the healthiest in the world, but all the ingredients I used were either organic  or minimally processed…so that accounts for something in my book!  I had a number of girlfriends over last Thursday night and wanted to make something vegetarian and yummy.  I was perusing Food & Wine’s website and came across this decadent and make-again (and again, and again) dish that took about an hour from start to finish.  Served with sautéed and lightly seasoned fresh organic baby spinach and of course a great glass of tempranillo.  YUM!
