Nutrient-packed Avocado Wasabi Salad

I believe I posted this recipe a few years ago and it is so good it is worth reposting.  I used to follow the blog VeganYumYum but the author hasn’t posted in a while.  However, I often return to this recipe, posted in January of 2010.  It is chock-full of nutrients – fiber, folate, vitamin A, C and K, rich in carotenoids, and monounsaturated fats!  To top it off, it has amazing flavor and texture: the avocado wasabi dressing adds a hint of kick and creaminess, while the almonds, broccoli and chickpeas a bit of crunch.  This is filling enough to serve as a main dish – and as the picture below shows, it is KID-APPROVED!
