Curried Cauliflower Soup

I was perusing the television the other afternoon and came across the Dr. Oz show.  I am not a follower of Dr. Oz, but I was intrigued because he had on Dr. Andrew Weil making some anti-inflammatory recipes.  If you haven’t heard of Dr. Weil you’ve probably been living under a rock for the past two plus decades.  I couldn’t give the man enough accolades: he is a M.D. that has been a driving force for decades on holistic living and eating, and educating the public on how to use food as a means to not only nourish us, but also help keep us young, healthy and disease-free.  What’s more, he challenges us to use food as medicine, as a means to empower us to improve our health through diet and lifestyle first, before the need for pharmacological intervention.  If you haven’t read any of his books, I would highly suggest you do so!

If you follow this blog, you know that I love soup!  I saw him making this anti-inflammatory soup (from a host of ingredients like turmeric, curry, cinnamon, and orange cauliflower) and had to give it a try.  Dr. Weil did not let me down – this one will be a regular on my weekly menu (and will be fabulous reheated for lunch).
