Shrimp over Lime Cilantro Pasta

I was at the Daniel Island Farmers Market the other week and I’m always buying either whole wheat pizza dough or fresh pasta/ravioli from Rio Bertolini.  They make amazing fresh pastas and dough, so I thought I’d pick up a few bunches of fresh pasta to serve with the shrimp I purchased from The Fish Lady at the market and make a quick dinner that night.

Although I am always encouraging 100% whole grains when possible, I came across an interesting fresh pasta that I had to try: lime cilantro.  YUM!  The gentleman behind the counter said it would taste fabulous with shrimp and warm salsa.  Couldn’t get any easier than that!

Here’s the result, which got rave reviews from all of my family.  Even though the pasta was from refined semolina flour, the 2 oz purchased portion was small and made for a nice light meal.  You’ve got to give this one a try.

Lime Spice Shrimp with Lime Cilantro Pasta

Serves 4

1 pound fresh SC shrimp, peeled and deveined

zest of 1 small lime

dash cayenne

dash cumin

1-2 Tbsp extra virgin olive oil

2 bunches (2 oz) lime cilantro pasta from Rio Bertolini

1 cup fresh salsa

1/4 cup chopped fresh cilantro

Cooking Instructions:

1.  Bring a 2 quart pot filled halfway with water to a boil.  Season with salt if you’d like.

2.  While water is heating, place shrimp in large bowl and mix in lime zest, cayenne and cumin. Set aside.

3.  Heat a large cast iron skillet and add olive oil.  Once olive oil heated, add shrimp to skillet and cook on each side approximately 2-4 minutes to cook through (but try not to overcook).

4.  While cooking shrimp, cook pasta in boiling water for approximately 3-5 minutes (will cook quickly because it’s fresh).  Drain and set aside.

3.  While pasta is cooking, heat a small skillet over medium-high and add salsa.  Bring to a simmer.

4.  Place 1/4 of the pasta in a dish and top with 1/4 cup heated salsa and 4 oz shrimp.  Sprinkle with fresh cilantro and serve immediately.

Finished product served with sauteed spinach.  Delicious!
