Vietnamese Grilled Chicken Paninis

I was perusing through the Williams-Sonoma catalog the other day and came across these Vietnamese Grilled Chicken Sandwiches that looked absolutely amazing!  My picture below definitely does not give it justice, but these sandwiches were fun to make and different from the usual meat/cheese Panini people are used to.

I used freshly baked sourdough bread from Earth Fare instead of deli rolls (fewer calories and better taste in my humble opinion); and, I pickled the radishes too – a whole bunch of radishes!!  My kids and I loved the pickled carrots and radishes so much that I’ve made another batch, and we snack on them or use as a side dish with other sandwiches. You’ve got to make the pickled veggies even if you don’t make the sandwich!

Two other changes from the recipe link above:

– On Sunday we cooked two whole chickens (proudly purchased from Our Local Foods – local, happy chickens!) on the Big Green Egg and saved the second one for these sandwiches.  Made preparing this Monday night dinner a breeze!

– Also, I made a Chinese Five Spice mayonnaise to put on the bread before pressing on my griddle (in lieu of an actual Panini press – works the same with my Lodge Panini press) – I basically took 1/4 cup light mayo, added some Chinese 5 Spice, some sriracha sauce and a bit of lime juice.

This is a must-try Panini!  Let me know how yours goes.
